Delicata squash is a beautifully striped winter squash with creamy yellow skin marked by deep green lines and a long, oblong shape. Known for its rich, sweet flavor reminiscent of sweet potatoes and brown sugar, it has smooth, edible skin that softens when cooked—no peeling needed! Its tender flesh makes it a favorite for roasting, stuffing, or slicing into rings for a colorful fall side dish.

 

Planting Guide:

  • Days to Maturity: 90–100 days

  • Planting Time: After all danger of frost has passed and soil is warm (at least 70°F).

  • Planting Depth: 1 inch deep

  • Spacing: Sow 2–3 seeds per hill, with hills spaced 3–4 feet apart; thin to the strongest plant.

  • Sunlight: Full sun (6–8 hours daily)

  • Soil: Well-drained, fertile soil enriched with compost; pH 6.0–6.8

  • Watering: Keep soil evenly moist, watering at the base to avoid mildew.

  • Harvest: Pick when rinds are firm and skins have developed full color; cure in a warm, dry spot for 1–2 weeks to improve flavor and storage.
