Ayote Green-Fleshed Squash — A traditional Central American heirloom prized for its rich flavor and resilience. The Ayote produces large, round-to-oblong fruits with tough, mottled green rinds that protect the beautifully vibrant green flesh within. The flesh is dense, smooth, and slightly sweet with nutty undertones—excellent for roasting, soups, or mashing. When cooked, it develops a creamy texture similar to pumpkin or kabocha but with a distinctive earthy sweetness. Highly productive and adaptable, this squash stores well and thrives in warm climates.

 

🌱 Planting Guide:

  • Soil: Prefers rich, well-drained soil with plenty of organic matter. Ideal pH: 6.0–6.8.

  • Planting Time: Sow outdoors after the danger of frost has passed and the soil has warmed to at least 70°F.

  • Spacing: Plant seeds 1 inch deep, 3–4 feet apart in rows spaced 6–8 feet apart, or 3–4 seeds per hill with hills spaced 4–6 feet apart.

  • Sunlight: Full sun (at least 6–8 hours of direct sunlight daily).

  • Watering: Keep soil consistently moist but not soggy—deep waterings encourage strong root growth.

  • Fertilization: Feed with a balanced organic fertilizer or compost at planting and again when vines begin to run.

  • Harvest: Harvest when the rind hardens and turns deep green with lighter mottling—usually 90–110 days after planting. Cure in a warm, dry spot for 1–2 weeks before storing.

  • Storage: Stores well for months in a cool, dry location with good airflow.
